Bourgogne

Burgundy is where terroir became a philosophy. On a thin ribbon of Jurassic limestone running south from Dijon, centuries of monks and growers mapped the land plot by plot — the climats — until each slope had its own name and character. Two grapes, Pinot Noir and Chardonnay, express that geology with almost forensic clarity. It is a region of small family domaines, frost-anxious springs, and wines that reward patience. Roughly 29,000 ha under vine; around 1.5 million hl a year.
