The garden of France, on soft tuffeau limestone riddled with cave cellars. Vouvray and Montlouis make Chenin from dry to sparkling to sweet depending on the year; Chinon, Bourgueil and Saint-Nicolas make some of the Loire's most charming, gravel-and-limestone Cabernet Franc.

Look for "sec," "demi-sec" or "moelleux" on the label.
