Saline, sea-fresh Muscadet from Melon de Bourgogne.

At the Atlantic mouth of the river, Melon de Bourgogne makes Muscadet — bone-dry, saline, the classic oyster wine. The best are aged sur lie (on their spent yeast) for texture and depth, and can age far longer than their reputation suggests.

It's the definitive oyster wine.
