Champagne's southern outpost, geologically closer to Chablis than to Reims. Its Kimmeridgian marl and Pinot Noir, plus a strong independent streak, have made the Aube a hotbed of ambitious organic and grower Champagne.

Rosé des Riceys is a rare still pink wine.
